3-Ingredient Peanut Butter Cookies



Today we are making peanut butter cookies, and to be completely honest with you, I thought these were going to be a fail.

So I looked up on the recipe, and nearly all of them had a crap-tonne of sugar in them, and from my last post, you know how I feel about that, so I replaced the sugar with honey, and here’s what came out. Enjoy!



  • 1/2 cup of peanut butter (smooth)
  • about 2 tablespoons of honey
  • 1 egg

note: this batch I made was pretty small, because I wanted to see if it would actually work without the sugar, so you can double the recipe, since only 8 cookies came out of these quantities.




  1. Preheat oven to 175*C and line a baking tray with baking sheet. I actually used one of those cupcake tin thingies, so I just used the little papers that came with it.
  2. Mix your ingredients together until they become smooth, like so


3. Make little dough blobs or just stick them in the muffin tin using an ice cream spoon thing like I did, and pop them in the oven for 6-8 minutes, you really don’t wanna overbake them, since they’re best soft. They also work really well with a glass of milk  😉





(yes i am aware of the fact that i may have overcooked them just a tad, but practice makes perfect after all)

Watermelon Mint Lemonade to Keep You Cool

The absolute hell-like heat that’s been around for quite a while now in our little town is really getting on my nerves. So I felt like lemonade! That’s a god idea! Now, you get a really straight-forward recipe in Beyonce’s music video for “All Night” lmao, but I was like “How can I take this classic to the next level?” (not the song, the drink. there’s no way on earth to take a beyonce song to the next level, her voice is gOLD.) And this came to my mind: “What is the fruit that screams summer, the fruit that everyone loves, the fruit that is an icon?” and then thought (i’ve been drinking) “WATERMELON” (wow another beyonce reference love me please). After this idea came to my mind, I thought I was being a frigging GENIUS. I thought this was a whole new concept that was going to go vIRAL. But I googled it, to see if it truly is an original idea, but no. Tens of thousands of pages popped up and my pride slooooowly drowned away,just like beyonce at the end of the “Formation” music video, on top of that police car. ( i NEED to stop ), which FINALLY brings us to today’s post. You know what they say,..when life gives you lemons, keep them! Cause hey, free lemons!



  • about 2 cups worth of watermelon (i made a small batch, about 2 Mason Jars)
  • 1/2 cup of water
  • the juice of half a lemon and a lime, if you like (you really don’t need more, because it would turn out REALLY sour, since I didn’t add any sweeteners)
  • several mint leaves






  • Add your watermelon and water to a blender, and blend till you get a juice.



  • Next, add the lemon juice and mint leaves.


  • If you want it a bit sweeter, you can dissolve some honey into your lemon juice and then add it on top of the watermelon juice, but I really don’t think that’s necessary, since the fruit itself is so sweet  😀



It is super refreshing and delicious, really deserves a sip! Gotta sip that lemonade after all  =))

Gluten-free Chocolate Cake

As I do, I was again on Tumblr, scrolling through those perfect people’s pages, looking at delicious-looking recipes, only to remind myself that I need to get a bikini body. It’s a struggle. It seems as if I’ve gained 3lbs from only LOOKING at those photos. So I leave Tumblr and go to the OG, that is Google. I’ve been looking for this recipe for over an hour, you have no idea how many different names I had to type in that little search bar, as: “Healthy and quick treats” “Vegan Cake No Bake” (rhyme unintended: SCORE!) and many more, until I’ve come across a recipe, that I also didn’t end up doing completely, since I’ve changed/ added a few ingredients here and there  😉 So, without any further ado, let’s get baking microwaving*.


  • 1/4 cup rye flour (or any flour really, but that’s just what I had around the house)
  • 1/4 cup stevia ( or, again, any sweetener of your choice)
  • 2 tablespoons unsweetened cocoa powder
  • pinch of salt
  • 2 tablespoons of vanilla soy milk (you know what comes here)
  • 2 tablespoons of oil (in the photos I was showing sunflower oil, but I ended up using coconut)


  • a handful of cherries
  • almond shavings




  1. Mix the dry ingredients in a bowl until there are no more lumps.
  2. Add the milk and oil and stir until you get a thick paste. If it’s not really doing anything, just add more milk and stir. Now would also be the time to add the cherries and almond shavings.
  3. Put the mixture in a microwave-safe container and microwave on high for 1 minute, or until it’s cooked on the “peak”, but still gooey (like the best brownies)

Gluten-free Apple Cake

Last week I was on Tumblr and I was quite bored. Well, 10 Tumblr minutes passed, aka 2 hours, and I found this recipe. I tried it, and OH MY GOD. This is the BEST thing ever. It’s done in 10 minutes and it also is a great post-workout snack, because, let’s be honest, the first thing we think about after a workout is sleep  FOOD.


  • 1 diced apple
  • 2 tablespoons of stevia
  • 1 teaspoon of cinnamon




  1. Put all of the ingredients in a microwave-safe container ( I used a ceramic pot ) and mix them until the stevia and cinnamon are evenly distributed.


2. Microwave it for 2 minutes. My pot actually had a lid, but if you don’t have a good one, you can just cover it in plastic wrap. When it’s out, it shouldn’t look much different, but it is a little hot, so be careful.


3. I also topped it with a bit of Greek yoghurt, a few almonds and cinnamon, to make it extra savoury. And voila!


Hope you try it for yourself, because believe me, it is worth it.

Tiramisu Truffles


Hey y’all

My favourite dessert is Tiramisu. I BLOODY LOVE IT. And I really wanted some, but waiting 24 hours for it to chill?! HELL NAH. So that’s why I’m currently typing this on my laptop for you. There you go, it’s so easy:


  • 140ml warm coffee;
  • 250gr mascarpone;
  • 24 finger biscuits;
  • 1 tbs sugar;
  • 1 tsp vanilla extract;
  • 1 tsp powdered sugar.

Preparation Mode:

  1. Break the finger biscuits in half and grind them in one of those kitchen robots or whatever it’s called until you get a fine powder and put it in a bowl.


2. Make some coffee and pour it over the powder and let sit for 10 mins.


3. Mix the mascarpone, sugar’s and vanilla extract together, till you ge

4. Put the cream over the coffee and  mascarpone mixture and mix it up.


5. Shape them into little balls and roll them around in some cocoa powder and then, refrigerate them for 25 minutes.


And, here is the final result:


You have NO IDEA how good they taste!! They are AMAZING OH MY GOD

DIY Mug Cakes

Let’s be honest. Sometimes you just don’t have the time to bake a whole batch of cake for one serving. That’s why mug cakes exist! I’m going to show you 5 Mug Cakes recipes, easy and done in MINUTES. Hope you’ll enjoy! ❤

1. Gluten Free Chocolate Mug Cake

By: Build Your Bite


  • ⅛ cup peanut butter,
  • 1 tablespoon applesauce
  • 2 tablespoons pure maple syrup
  • 1 tablespoon special dark cocoa powder
  • 1.5 tablespoons gluten free oat flour
  • ½ teaspoon coconut flour
  • ¼ teaspoon baking powder
  • 1 egg
  • 1.5 tablespoons chocolate chips
  • ⅛ teaspoon vanilla extract
  • ⅛ teaspoon sea salt


  1. Melt peanut butter in a mug for 30-35 seconds, or until a more melted consistency.
  2. Combine remaining ingredients in same mug and stir very well (make sure egg is totally combined)
  3. Microwave for 1-2 minutes, or until a toothpick inserted comes out clean

This one tastes AMAZING and it is perfect for any diet!

2. S’mores Mug Cake

  • 2-3 tablespoons graham cracker crumbs
  • 3 1/2 tablespoons unsalted butter, melted
  • 2 tablespoons granulated sugar
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1/4 cup whole wheat pastry flour
  • 2 tablespoons unsweetened cocoa powder (mine was dark cocoa)
  • 1/8 teaspoon baking powder
  • pinch of salt
  • 1 1/2 ounces milk chocolate (chopped or morsels)
  • marshmallow fluff, cream or actual marshmallows


  1. Combine 3 tablespoons butter and 1 ounce of chocolate in a small bowl, then melt in the microwave for 20-30 seconds. Set aside. In another bowl, combine remaining melted butter with 2-3 tablespoons of graham cracker crumbs and stir until moistened. Press graham crumbs into the bottom of your mug.
  2. In a bowl. whisk egg, sugar and vanilla until smooth. Add in flour, baking powder, salt and cocoa, stir until a thick batter forms. Stream in melted butter and chocolate, mixing to combine. Fold in remaining chocolate chips. Add half of the mixture on top of the graham crust, then throw on a scoop of marshmallow fluff/cream or a few marshmallows. Add remaining batter on top, then pop in the microwave for 1 minute and 20 seconds to almost 2 minutes. Remove and top with additional marshmallow if desired. You can pop it back in the microwave for 5-10 seconds to make them melty, or pop them directly under the broiler for about 10 seconds to toast if desired. You can also use a kitchen torch if you have one. Sprinkle with graham crumbs!

3. Salted Caramel Apple Spice Mug Cake

  • 1/4 cup all-purpose flour
  • 1/2 teaspoon apple pie spice
  • 1/2 teaspoon baking powder
  • 3 tablespoons granulated sugar
  • Pinch of salt
  • 1 1/2 tablespoons unsweetened applesauce
  • 2 tablespoons milk
  • 1 teaspoon vegetable oil
  • 1 teaspoon water
  • Caramel Drizzle of your choice


  1. In a small bowl, whisk together the dry ingredients.
  2. Make a well in the center of the dry ingredients then add the wet ingredients. Whisk everything together until combined and no lumps remain.
  3. Pour batter into a microwave-safe mug. Mine was a 14-ounce mug. You want enough head space for the cake to rise without pouring over.
  4. Place a paper towel into the microwave and set the mug on top (this is to catch any batter if your mug cake overflows).
  5. Microwave mug cake for 1 minute and 50 seconds on high (PLEASE READ NOTES CAREFULLY BELOW)
  6. Carefully remove from microwave, drizzle your caramel sauce on top and enjoy!

Let me just tell you, this is PERFECT for fall. I LOVE IT.

4.Berry Cobbler

By: Domestic Fits


  • 3/4 cup Strawberries
  • 1/4 cup powdered sugar
  • 1/3 cup flour
  • 1 tbs white sugar
  • 1/2 tsp baking powder
  • 1 tbs butter
  • 2 tbs milk


  1. Chop berries and add to a mug. Add powdered sugar, stir to combine.
  2. In a separate bowl, add the flour, white sugar, baking powder and mix to combine. Add the butter and rub in with your fingers until combined. Add the milk and stir (I used my hands for this too, less dishes to wash).
  3. Add the dough to the top of the berries (sprinkle with additional sugar, if desired).
  4. Microwave on high for about 1 1/2 to 2 minutes.
  5. Allow to cool because this mother will be screaming hot.

*The ratios used are for a large mason jar mug. This recipe will also make 2 servings in smaller mugs. Make sure to only fill the mug no more than 2/3 full or it will bubble over during “cooking”.

This is amazing during the summer. Just sayin’.


5. White Chocolate and Matcha Tea Mug Cake

  • 1 slice of butter 1 cm thick (30g)
  •  6 squares of white chocolate (30g)
  •  1 egg• 2 tbsp caster sugar
  • 5 tbsp plain flour
  • ½ tsp baking powder
  • ½ tsp matcha green tea
  • 5 fresh raspberries


  1. In a mug: melt the butter with the chocolate in the microwave for 30 seconds (800 watts).
  2. Beat the mixture until smooth, then allow it to cool slightly. One by one, whisk in the egg, sugar, flour, baking powder and green tea.
  3. Push four raspberries into the middle of the mixture. Cook in the microwave for one minute 40 seconds (800 watts).
  4. Decorate with one raspberry. Allow to cool for one minute before eating.
